The crafting skill cap now stands at 110 after the March 2012 update. In this year's census, we examined the percentage of players who have achieved the rank of artisan or above in each craft, as well as those who have raised their skills to 100 or higher.

First, let's look at the percentage of players who have reached the rank of artisan (or above) in each craft. Similar to previous years, the most popular skills are cooking, alchemy, and woodworking.
Considering the nature of the Vana'diel economy, it stands to reason that crafts able to produce high-demand consumable items would maintain a high level of popularity.

Finally, let's see how many characters have raised their skills to the current cap of 110.

Currently, we have eleven characters who have reached level 110 in Fishing and Cooking.
As raising other skills to 110 requires rare materials obtainable in Voidwatch, it stands to reason that players would require more time.
